Gluten and Dairy Free Cranberry Bliss Bars

December 23, 2012

I love Starbucks during the Holiday season– they’ve got red cups, gingerbread lattes, and cranberry bliss bars! I was definitely missing out on this treat this winter, so I figured I would make a gluten and dairy free version myself. They’re just as delicious and surprisingly simple! And they go perfectly with a cup of coffee :)

Cranberry Bliss Bars
Recipe adapted from 3sisters

Cookie Ingredients:
-1 1/2 cups all purpose gluten free flour (I used Bob’s Red Mill)
-1 1/4 cup packed brown sugar
-1 1/2 sticks softened margarine
-3 eggs or 3 tbsp ground flaxseed + 1/2 cup and 1 tbsp water for a vegan version
-1 1/2 tsp vanilla extract
-1/2 tsp salt
-1 tsp xanthan gum
-3/4 cup cranberries

Frosting Ingredients:
-1/2 package (4 oz) Tofutti dairy free cream cheese
– 2 cups powdered sugar
-1 tsp vanilla extract
-3 tsp lemon juice

Preheat oven to 350 degrees. Mix all cookie ingredients, adding the cranberries last, and pour into a 9×13 inch pan. Bake for 20 minutes.

While the cookie is baking, mix up your frosting. Whisk together the cream cheese, vanilla, and lemon juice first and then mix in the powdered sugar 1 cup at a time. Once your cookie is cooled, add the frosting and sprinkle 1/4 cup dried cranberries on top. Chill before slicing.

I have a question! How many cranberries do you put in the batter? I didn’t see that listed. Thanks!
